John's Breakfast Sandwiches

SERVES: 2 PREP: 5 minutes TOTAL TIME: 10 minutes

No drive-thru breakfast can compete with this masterpiece.

The flavors in John's famous breakfast sandwich may seem simple, buuuut wait for it. John combines classic ingredients, like American cheese (my absolute fav), with this next-level homemade breakfast sausage. You can of course get the patty pre-made, but I highly recommend making it for that extra flavor—it makes a world of difference! I can confidently say this having had three of them before 8am the other day. Yes, I was out of control, but believe me this breakfast sandwich is hard not to love!

For the sausage patties:

  • ½ pound ground pork

  • ¼ cup finely minced onion

  • 1 tablespoon light brown sugar

  • 1 tablespoon minced garlic (about 2 cloves)

  • 1 tablespoon vegetable oil, plus more for frying

  • 1 ½ teaspoons ground sage

  • 1 ½ teaspoons red pepper flakes

  • 1 ½ teaspoons kosher salt

  • ½ teaspoon freshly ground black pepper

For the sandwiches:

  • 4 English muffins

  • 2 tablespoons butter

  • 8 regular or 4 thick slices American cheese

  • 4 eggs, cooked sunny side up

  • + Sriracha

  • + kosher salt and freshly ground black pepper (optional)
