You might remember this breading from the original Cravings. A spicy, tangy blend of grated parmesan and toasty panko crumbs...oh baby. If you can find some firm green tomatoes (an unripe red tomato, not a green heirloom tomato!) in your neck of the woods, these guys make theeeeee perfect snack. Honestly I have yet to try a fried or baked green tomato where the breading sticks and crisps quite as well as this. The sauce is...I don’t have a name for it. It’s a beautiful hybrid of some sort of BBQ ranch and the horseradishy bloomin’ onion dip. Chrissy’s BBQeautiful sauce.
1 ¼ cups all-purpose flour
½ teaspoon cayenne pepper
2 teaspoons kosher salt, plus more for seasoning
½ teaspoon freshly ground black pepper, plus more for seasoning
3 eggs
1 cup panko (Japanese-style) breadcrumbs
1 ¼ cup finely grated parmesan cheese (I like to use my Microplane)
3 tablespoons olive oil
1 pound green tomatoes, cut into ¼-inch-thick slices
Garlic salt, for seasoning
¾ cup mayonnaise
½ cup sour cream
½ cup buttermilk, shaken
2 teaspoons prepared horseradish, slightly drained
1 tablespoon Old Bay seasoning
10 dashes hot sauce (I use Louisiana!)
Slice, then spice. Very nice.
