We've all had the same tried and true grilled corn recipes a million times—whether it's Mexican-style elote or simply boiled or grilled with salt and butter. So this year we're mixing it up with this unique Thai-inspired recipe that you can make in less than 30 minutes. Start by oiling and seasoning cut-up pieces of whole corn and grilling them up (our Lowkey Lavender Grill pan is perfect for this). Then make a quick and easy sauce using butter, chili powder, Thai sweet chili sauce, lime juice, brown sugar, and fish sauce. Drizzle over the grilled corn and top with a mixture of lime zest, Parmesan cheese, and fresh chopped cilantro. You won't make corn any other way again!
4 pieces of corn, husk removed, cut each into halves
2 tablespoons extra virgin olive oil
Pinch of salt and pepper to taste
Zest of 1 lime
½ cup grated Parmesan
1 tablespoon chopped cilantro, keep separate
Half a stick of unsalted butter
Juice of 1 lime
1 tablespoon fish sauce
2 tablespoon Thai sweet chili sauce
1 tablespoon brown sugar
1 teaspoon crushed red pepper flakes
½ tablespoon chili powder
2 tablespoons coconut milk
Corny, in the best possible way.
