Forget about oatmeal—the better bowl to start your day with is a crispy rice bowl. If you’ve ever had spicy tuna crispy rice sushi, you know how incredible that crunch is. If you haven’t, let us introduce you. Pieces of crisped-in-a-skillet (not deep-fried!) rice mix with tender roasted sweet potatoes, a bunch of garlicky greens, and eggs for a hearty and satisfying meal to kick off your day in the best way. It’s great for breakfast, lunch, brunch, or whenever the craving hits. You can mix in other vegetables that you love, too—it's super customizable to your favorite flavors.

  • 1 (¾ pound) sweet potato, peeled and cut into ½-inch cubes

  • 10 tablespoons vegetable or canola oil, divided

  • ¾ teaspoon kosher salt

  • ¼ teaspoon freshly ground black pepper

  • 1 ½ cups cooked short-grain rice (white or brown)

  • 5 cloves garlic, thinly sliced

  • 1 Thai bird chili, seeded and thinly sliced (or 1 teaspoon sliced jalapeño)

  • 3 bunches cleaned greens (such as kale, spinach, Swiss chard), leaves only, chopped 

  • ½ teaspoon fish sauce

  • ½ teaspoon maple syrup

  • 2 eggs
