Pepper's Homemade Sweet Dark Soy Sauce

If you can't find sweet dark soy sauce at the store, make this easy homemade version!
Dark soy sauce, which has a sweet molasses-like flavor to it, is an important ingredient for stir-fried noodles and other dishes in Thai cooking. But if you don’t have an Asian market nearby or can’t find store-bought dark soy sauce, this easy recipe is a good substitute. Use it for "bow-thai" see ew or Korat-style pad thai!
In a small saucepan over high heat, combine the brown sugar with ¼ cup of water. Stir until the sugar is dissolved, then reduce the heat to medium low.
When the sugar syrup starts to look like the color of coffee, 4–5 minutes, slowly pour in the soy sauce (so it doesn’t bubble up) and stir until combined. Let cool completely; store in the refrigerator for up to 1 month.
