Want a soup that tastes like you’ve been slow-cooking it all day, but you only really have half an hour? We’ve got you covered. As part of our easy meal prep plan, remove all the meat from a rotisserie chicken and simmer the bones in store-bought chicken stock. It will fortify the soup with lots of extra flavor with barely any effort. Then add in cooked rice, dark meat rotisserie chicken, aromatics, lots of fish sauce, and a burst of freshness from scallions, cilantro, and lime. This makes a big batch and freezes so well for future lunches or dinners for you, or sharing with family or friends on a cozy day.
2 tablespoons canola or vegetable oil
3 shallots, finely chopped
1 carrot, peeled and chopped
½ jalapeno pepper (optional for a little heat)
4 cloves garlic, minced
1 tablespoon ginger, grated (about 1-inch piece)
8 cups chicken stock (two 32-ounce boxes)
4 tablespoons fish sauce
2 tablespoons soy sauce
+ Bones from rotisserie chicken
2 cups cooked dark meat rotisserie chicken, shredded
2 cups cooked short grain rice
1 bunch cilantro (leaves only), chopped
4 scallions, green and pale green parts only, chopped
2 limes, cut into wedges, for serving.
