This soup was originally called “everything soup” because it has all of my faves in one pot. I could have added a lot more stuff but it ended up being mostly broccoli-cheddar with ranch seasoning (use our Ranchiest Ranch popcorn seasoning or a ranch packet!) and chicken to make it more hearty and comforting. It's soooo good as it is, but even better if you load it up into a bread bowl. Toast up all the bread you scoop out and you've got croutons or snacks for later!
2 tablespoons olive oil
2 small boneless skinless chicken breasts (about ¾ pound) or 2 rotisserie chicken breasts, shredded
1 ½ teaspoons kosher salt, plus more for seasoning
½ teaspoon freshly ground black pepper, plus more for seasoning
1 stick unsalted butter
1 medium onion, diced
3 cloves garlic, minced
½ cup flour
3 cups half and half or whole milk
3 cups shredded sharp cheddar cheese
4 cups low sodium chicken broth
2 tablespoons Cravings Ranchiest Ranch seasoning or 1 (1-ounce) ranch dressing or dip packet
1 teaspoon paprika
½ teaspoon cayenne pepper
¼ teaspoon ground nutmeg
4 cups broccoli florets, finely chopped
1 cup shredded carrots
6 small, round loaves of bread—often labeled Baby Boule, about 8 ounces and 6" in diameter, and made of French bread or sourdough—for making bread bowls, optional
