When that afternoon snack craving hits and you need something fast, whip up a batch of homemade potato chips. All you need to do is peel and slice a potato as thinly as possible, load up with your favorite seasonings (Cracked Black Pepper & Citrus from the Shortcut Spice Sampler is a fan fave), and bake 'em off until they're ultra crispy and crunchy. Since these are hand-sliced, some will come out a little soft and tender with crisp edges while others are verrrry dark brown, but all are delicious.
2 medium potatoes (10–12 ounces)
2 tablespoons olive oil
½ teaspoon kosher salt, plus more for seasoning
½ teaspoon freshly ground black pepper, plus more for seasoning
