This is a sweeter version of the killer corn pudding in Hungry For More, which we actually originally did for So Delushious back in the day. It’s super easy, and we all know my love of canned corn knows no bounds and the sweet-on-sweet of corn and sugary coconut pudding is heaven.
1 (13.5 ounce) can coconut milk
½ cup sugar*
1 teaspoon kosher salt
1 tablespoon cornstarch
¼ teaspoon ground nutmeg
1 (15.5 ounce) can corn, drained
Move over, pumpkin pie! If you make this once, you will make it every year.
