For the Spicy Rice Krispies:
1 cup rice krispies
1 tablespoon chili crisp (like Cravings Smoky Chipotle or your favorite chili crisp)
For the Dressing:
2 garlic cloves, grated
Zest of 1 lemon
2 tablespoons lemon juice
1 teaspoon fish sauce (or vegetarian fish sauce/soy sauce for a vegetarian version)
1 teaspoon Dijon mustard
1 tablespoon miso paste
½ cup grated Parmesan cheese
1 cup mayonnaise
For the Salad:
3 hearts of romaine, chopped
1 cup cucumber, quartered and sliced into ¼" pieces
1 cup cherry tomatoes, halved lengthwise
Fresh parsley leaves (optional, for garnish)
Freshly grated Parmesan cheese (optional, for garnish)
Rotisserie chicken, shredded (optional, for added protein)
Make the Spicy Rice Krispies
In a small bowl, mix together the Rice Krispies and chili crisp until evenly coated. Set aside.
Prepare the Dressing
In a mixing bowl, whisk together the garlic, lemon zest, lemon juice, fish sauce (or vegetarian substitute), Dijon mustard, miso paste, grated Parmesan, and mayonnaise. Whisk until smooth. Chill in the fridge until ready to use.
Assemble the salad
Add the salad ingredients into a mixing bowl.
Dress the greens with ½ cup of the dressing and plate. Option to drizzle dressing once plated.
Garnish with parsley and scatter freshly grated parmesan cheese.
Sprinkle the spicy rice krispies over the salad.
Additional tips
Parsley leaves and freshly grated Parmesan cheese are optional for finishing.
Shredded rotisserie chicken can be added for extra protein.
