Make the matzo or tortilla pizza
Preheat the oven to 400°F. Choose your base and top it with any sauce, vegetables, and meats of your choice. Place the pizza on a baking sheet lined with parchment paper and bake for 10–12 minutes.
Make the cauliflower crust
Preheat the oven to 400°F. Line a baking sheet with a clean kitchen towel. Bring ½ inch of water to a boil over high heat in a wide skillet with a lid. Grate the cauliflower on the large holes of a box grater, add it to the boiling water, spread evenly, cover, reduce the heat to medium, and steam for 5 minutes (you can also steam it in a regular pot or in a glass bowl in the microwave). Drain the cauliflower, spread it out on the towel, let it cool slightly, then gather the towel and squeeze out as much liquid as possible. Transfer the cauliflower to a bowl and add the mozzarella, egg, salt, garlic powder, onion powder, and pepper. Line the baking sheet with parchment paper and use your hands to spread the “dough” into a 10-inch circle. Bake until golden and the edges are browned, about 20 minutes. Top with your favorite sauce and pizza toppings and return to the oven for 10–12 minutes.
