A batch made in heaven: We love mimosas for brunch, and we love to make them by the pitcherful to keep the good times flowing like we've done with this elevated pink grapefruit version. It starts with fresh lychees, the aromatic Southeast Asian fruit, which get added to the bottom of each glass with their syrup. Then in our gorgeous Iridescent Carafe you add fresh mint leaves, sparkling wine (cava, Champagne, your pick!), and the star ingredient: pink grapefruit juice (so much tastier than orange juice in our humble opinion). Mix well and pour into each glass, garnishing with a wedge of fresh grapefruit and more fresh mint. Perfect for Mother's Day brunch, or any occasion!
4 canned lychees in light syrup, plus 4 tablespoons of their syrup
½ bottle chilled dry sparkling wine, such as cava, 12.5oz
1 ½ cups fresh grapefruit juice (from 2 large or 3 medium grapefruits)
Fresh mint and grapefruit zest strips or slices, for garnish
