Inspired by a local trending dish, we're taking the flavors of a classic baked potato and making it pasta! It starts with store-bought potato gnocchi which is cooked according to package directions. Then, in a separate pan, make caramelized onions. Once they're browned up and sweet, we add sour cream, chicken broth, cheese, and chives. Toss the pasta into the sauce, mix, and garnish with cooked bacon, more cheese, crumbled kettle chips, and chives as desired. File this under quick and easy minute meals you'll want to make again and again!
One 1-pound package uncooked gnocchi
3 tablespoons olive oil
1 large onion, thinly sliced
4 pieces crumbled bacon
1 cup sour cream
1/3 cup chicken broth
1 cup shredded orange cheddar cheese
2 tablespoons chopped chives plus more for garnish, could also use scallions if preferred
1 cup kettle-style potato chips
