You say potato, we say Irish potato candy. This fudge-like candy is a St. Patrick’s Day tradition in Philadelphia, typically made with cream cheese, butter, a pinch of salt, powdered sugar, and coconut. It’s then rolled in cinnamon to resemble spuds. Our Cravings twist is using toasted coconut for nuttiness and salted butter to balance out the sweetness.
4 tablespoons (½ stick) salted butter, at room temperature
4 ounces cream cheese, at room temperature
1 teaspoon vanilla extract
1 pound (4 cups) powdered sugar
7 ounces toasted sweetened shredded coconut (or sweetened shredded coconut you toast yourself—see note in directions)
1 ½ tablespoons ground cinnamon
