Looking for a way to ring in the new year without the alcohol? This refreshing, fruity, but not-too-sweet mocktail is the perfect way to say cheers. Hibiscus tea is one of my favorite drinks, and this turns it into a pretty, deep pink cooler with pomegranate and lychee. This makes one cocktail, but you can whip up a big batch for friends, too, and even spike them if you have people who want to drink.
⅓ cup brewed hibiscus tea, chilled
¼ cup pomegranate juice
2 tablespoons lychee syrup, from a can of lychees in light syrup
1 teaspoon lime juice
+ Lime wheels or canned lychees, for garnish
