This sushi is everything! It's like your favorite bagel & lox in sushi form, filled with slices of tender smoked salmon, rich cream cheese, crisp cucumber, and a sprinkle of our Chili-Garlic seasoning. The whole thing is coated in everything seasoning to add a pop of flavor and crunch. It’s not your typical sushi, but just roll with it!

INGREDIENTS DIRECTIONS

For the Sushi Rice:

¼ cup unseasoned rice vinegar
2 tablespoons sugar
1 ½ teaspoons kosher salt
1 cup sushi rice

For the Sushi Rolls:

4 sheets nori (seaweed)
1 small, ripe avocado
4 ounces smoked salmon, thinly sliced
½ cup (⅓ of an 8-ounce block) cream cheese
1 Persian cucumber, peeled and cut into thin strips
⅓ cup everything bagel seasoning
+ Cravings' Chili Garlic seasoning or shichimi togarashi*(optional)
+ Soy sauce and spicy mayo of your choice for serving

*Shichimi togarashi is a Japanese seven-spice blend, found at Asian markets and many major grocery stores.

Make the rice:

Combine the rice vinegar, sugar, and salt in a small bowl and microwave until the sugar is dissolved, 30–45 seconds.
Place the rice in a colander and run under cold water until the starch is rinsed away and the water runs clear, 2–3 minutes. Place the rice in a bowl, cover with cold water, and soak for 20 minutes. (This will help make sure it is tender and cooks evenly.)
Drain the rice well, place it in a small saucepan, and cover with 1 ¼ cups water. Bring to a boil over medium-high heat, stirring often so the rice doesn’t stick to the bottom of the pot. Cover, reduce the heat to a very low simmer, and cook until all the water is absorbed, 13–15 minutes.
Transfer the rice to a medium bowl to cool for a few minutes, then gently stir in the vinegar mixture 1 tablespoon at time until absorbed. Gently press plastic wrap into the surface of the rice and let it sit for a few extra minutes to absorb any additional moisture.

Make the sushi rolls:

Arrange a sushi mat on a clean towel. Using wet hands, spread about ½ cup of the cooled sushi rice over the center of the mat into a very thin layer equal in size to one of the nori sheets.
Arrange the nori sheet on top of the rice, then cut thin pieces of cream cheese off the block and arrange them in a strip from end to end on top of the nori, about 3 inches from the bottom of the rice.
Layer one quarter of the salmon, avocado, and cucumber strips on top of the cream cheese. Sprinkle Cravings' Chili-Garlic seasoning or shichimi togarashi on top of the filling, if using.
Moisten the bottom of the nori sheet with water, then pull the bottom over the filling and press it tightly down onto the other side of the filling. Use the sushi mat to roll the ingredients into a tight roll. Repeat with the remaining ingredients until you have four inside-out rolls.
Scatter the everything bagel seasoning on a plate, then gently press each roll into the seasoning on all sides. Use a sharp knife to slice the roll into 7 or 8 rounds, wiping the knife clean with a damp cloth occasionally to prevent sticking.
Arrange the sushi on a serving platter, sprinkle with more Chili-Garlic seasoning or shichimi togarashi, and serve with soy sauce and spicy mayo.
