Swap classic chicken wings with extra-crispy baked cauliflower for your next game day. It's the perfect vehicle for spicy, saucy goodness, and so satisfying that you won't miss the fried chicken. The trick is coating the cauliflower in batter made of rice flour and regular flour, then into olive oil-coated breadcrumbs for double crunch. These wings are baked on a sheet pan, but you could also toss them in the air fryer at 375°F for 15–20 minutes, or until golden brown.
1 medium head cauliflower
2 cups panko breadcrumbs
⅓ cup vegetable oil
½ teaspoon fine sea salt
¾ cup all-purpose flour, plus more as needed
¼ cup rice flour
½ teaspoon smoked paprika
½ teaspoon sweet paprika
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons fish sauce
1 cup milk
½ cup buffalo sauce, such as Frank’s Red Hot
3 tablespoons honey
1 celery stalk, leaves included, thinly sliced
⅓ cup mayonnaise
3 tablespoons crumbled blue cheese
1 teaspoon lemon juice
