Fat Tuesday, aka national-excuse-to-eat-a-donut day, is one our favorite food holidays of the year. So naturally, we're making something deep-fried and delicious to celebrate. Inspired by the flavors of a truly classic dessert, key lime pie, this easy-to-make donut hole recipe gets fried up in our Lowkey Lavender Braiser to a golden-brown perfection and then gets dusted with a lemongrass-infused sugar to finish. A simple dipping sauce made with store-bought vanilla pudding brings the flavor and texture of the key lime pie filling. Skip the trip to Florida and make this instead!
⅓ cup plus 2 tablespoons sugar, separately
One 2-inch piece of fresh lemongrass (tender white and light green parts only), very finely chopped
½ cup store-bought prepare vanilla pudding
Juice and zest of 1 small lime
1 teaspoon fine sea salt
1 ¾ cups all purpose flour, plus more as needed
2 ½ teaspoons baking powder
⅔ cup buttermilk*, plus more as needed
½ stick (4 tablespoons) butter, cubed, softened to room temperature (very soft!)
Vegetable oil, for frying
*If you don’t have buttermilk, whisk together 1/3 cup low fat or full-fat plain yogurt with ⅓ cup low-fat or whole milk.
