If you like Chrissy's famous banana bread, you're going to LOVE this twist on banana pancakes. Instead of adding sliced up bananas into pancakes, this version coats pieces of banana in pancake batter. (Just use your favorite pancake mix or go-to recipe to coat them.) The flavors and toppings are inspired by Twitter's (and Uncle Mike's) Banana Bread from Cravings: Hungry for More, including secret ingredient vanilla pudding for richness and plenty of shredded coconut, walnuts, and chocolate chips. Key tip: You want the batter to cling well to the bananas, so make sure it’s thick; if needed, add a tablespoon of pancake batter or flour to thicken.
1 ½ cups prepared thick pancake batter
⅓ cup mini chocolate chips, plus more for garnish
¼ cup sweetened shredded coconut, plus more for garnish
¼ cup chopped walnuts, plus more for garnish
2 tablespoons instant vanilla pudding mix
¼ teaspoon ground cinnamon
1 firm banana, sliced into 12 (¾-inch) rounds
+ Maple syrup, for serving
+ Butter, for cooking the pancakes
