Pepper Thai here (Chrissy’s mom)! It’s April and my favorite time of year is about to begin: Songkran, aka Thai New Year starts this week and you’ll very often find me home in Thailand for the occasion. The big events include loud street parties, parades, and even a giant water fight (with squirt guns!), but it’s also a time of celebration for every family to serve up their most festive foods for the occasion (aka CARBS). So I thought I’d take a minute to share some of my favorites from The Pepper Thai Cookbook, and the Eastern part of Thailand where I’m from, including my famous Pad Korat (my version of Pad Thai), an easy and party-ready BBQ pork chop recipe, and even mango sticky rice for dessert!
