Who said that pizza can't be healthy? It can be...or at least "Dirty Healthy." That's my version of "healthy" that doesn't have to be sooo green and boring—it can be pizza with a crispy cauliflower crust and toppings that remind you of tacos, nachos, or a little bit of both. You can definitely cheat and use a pre-made cauliflower crust if you're rushed for time (or feeling lazy...I get it) but the payoff with making your own is that you can put as much cheese inside and on top as you want. It's equally satisfying and great for game day viewing parties or a random Tuesday night snack.
1 small cauliflower (about 1 ¼ pounds)
½ cup shredded mozzarella cheese
1 egg, lightly beaten
1 teaspoon kosher salt
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon freshly ground black pepper
Mexican cheese blend
Canned black beans, drained
Sliced jalapeño
Chopped tomato
Sliced avocado
Cilantro
Greek yogurt thinned with lime juice to drizzle
