Even before Cravings got a TikTok, I had seen the viral baked feta pasta recipe EVERYWHERE. Originated by Finnish blogger Jenni Häyrinen as "uunifetapasta," it is a one-pan wonder, roasting tomatoes with a whole block of feta cheese until the cheese is melted and bubbly and the tomatoes can be smashed into a sauce. Even though I'm not normally a huge fan of feta, I had to make my own version—that was spicier! The kick comes from Thai bird chiles. There's lemon zest and juice to complement the tanginess of the feta, and a nice crunch from toasted pine nuts. It's a twist on my spicy, lemony roasted tomato pasta, and you can use any pasta shape you like!
2 pounds cherry tomatoes
1 (8-oz.) block feta
½ cup olive oil, divided
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 pound bow tie pasta (or pasta of your choice)
4 cloves garlic, crushed
1 teaspoon finely minced Thai bird or other fresh hot chiles (seeded, if you like) plus more for garnish
½ cup lightly toasted pine nuts
2 tablespoons chopped fresh parsley
+ finely grated zest and juice of 1 lemon (1 ½ teaspoons zest, 2–3 tablespoons juice)
