What happens when you transform a deep-fried French toast sandwich into a casserole? You’re about to find out. A Monte Cristo is traditionally made with ham, turkey, and Swiss cheese sandwiched in between two slices of French toast that’s either deep-fried or pan-fried and topped with powdered sugar and jam or maple syrup. It’s delightfully decadent…and will put you in a food coma. We kinda lightened it up by not deep-frying it, but still kept all the eggy, carby, cheesy goodness in casserole form, using toasted English muffin pieces as the bread. Make it for your next brunch, breakfast-for-dinner, or just-because meal.
8 plain English muffins
¼ cup (½ stick) unsalted butter, melted
8 large eggs
2 cups whole milk
1 tablespoon Dijon mustard
1 ¼ teaspoons kosher salt
½ teaspoon black pepper
2 cups shredded Swiss cheese
6 ounces thinly sliced deli oven-roasted turkey, cut into 1-inch pieces
6 ounces thinly sliced deli ham, cut into 1-inch pieces
2 tablespoons sliced chives, plus more for garnish
2 tablespoons powdered sugar
¾ cup raspberry jam, warmed
