Looking for a summer salad that actually feels like summer? This Chopped Grilled Summer Salad is smoky, juicy, and bursting with color—like a farmers’ market haul got a glow-up. Grilled corn, zucchini, sweet peppers, and mushrooms get chopped and tossed with creamy avocado and a zingy basil-lime-jalapeño vinaigrette that brings just the right kick. Served over spring greens and ready in 30 minutes, it’s the kind of salad that actually steals the show at BBQs, picnics, or weeknight dinners. Add a sprinkle of feta and fresh basil on top? Chef’s kiss.

Ingredients:

 ½  cup avocado or olive oil

2 corn, shucked

1 bunch asparagus, trim woody ends

1 medium red bell pepper, sliced into 4 pieces

1 large sweet or red onions, peeled and quartered lengthwise 

1 medium zucchini , ends trimmed and quartered lengthwise

6 cremini mushroom, skewered for grilling

12 grape tomatoes, skewered for grilling

8 small bunched carrots, top trimmed off, peeled

1 bunch green onions, root end trimmed off

1 avocado, cut into wedges

Juice of 1 lime

4 cups spring mix of choice 

Salt and pepper to season


Basil Lime Jalapeno vinaigrette:

1 cup packed basil leaves and stems

1 lime, zested 

1 large green jalapeno, stem removed and chopped ( remove seeds to reduce heat)

1 clove garlic

½ cup olive oil

½ teaspoon sea salt

Cracked black pepper to taste
