But here's the best thing about fried rice: it's super adaptable! You can swap the bacon for mushrooms if you're vegetarian, add some eggs, or pack in even more veggies, like peppers or snap peas. Pro tip: Use leftover rice instead of fresh-cooked rice, since it is drier and will get crispier in the skillet.
¾ cup chicken broth
2 tablespoons soy sauce, plus more to taste
2 tablespoons vegetable oil
6-7 slices thick-cut bacon (about 6 ounces), diced
2 tablespoons minced garlic
1 fresh hot chili, minced (seeded if you don’t like it too hot)
3 cups broccoli florets, cut into 1/2-inch florets
½ cup chopped scallions
