These genius-if-I-do-say-so-myself snacks have all the flavor of mom's classic tom yum soup but in the form of deviled eggies. Use a powder or paste you can get in Thai Town (or on Amazon town), and top with chicharrones or other pork rinds for crunch.
12 hard boiled eggs
½ cup mayonnaise
2 tablespoons finely minced shallot
1 tablespoon fish sauce
2 teaspoons rice vinegar
1 ½ teaspoons tom yum powder or paste
1 small bag chicharrones (you will have extra, so snack away)
1 lime
Pinch of kosher salt
The devil made you eat every last one.
