4 slices thick-cut bacon, roughly chopped
3 large carrots, diced
3 stalks of celery, diced
1 medium onion, diced
2 tablespoons minced garlic
1 cup dry white wine
6 cups chicken stock, plus 1 cup more if needed
1½ cups dried split peas
2 teaspoons kosher salt, plus more for seasoning
2 bay leaves
1 smoked ham steak (about ¾ pound), diced
