File under kinda-sorta-healthy recipes that you'll actually want to eat: We're doing our spin on a classic chicken Caesar salad, but with a Chrissy twist. It starts with homemade sourdough croutons that get baked up with salt, pepper and Parmesan cheese. Then, a delicious green goddess dressing made with fresh herbs like cilantro, basil, and parsley, mixed with buttermilk, garlic, lemon juice and mayo (bc it's only kinda-sorta healthy). Then, our secret ingredient: a dash of fish sauce to add umami and salinity (instead of the anchovies typically used in a classic Caesar dressing!). Brush it onto chicken breasts as they char up on our Lowkey Lavender Grill pan! Garnish with more Parmesan cheese, croutons and serve. Salad never tasted this good!
3 cups cubed day-old sourdough bread
3 tablespoons olive oil
¼ cup finely shredded parmigiano reggiano cheese
2/3 cup mayonnaise
1/3 cup buttermilk
1/4 cup chopped fresh chives
1/4 cup lightly packed cilantro leaves
¼ cup lightly packed parsley leaves
¼ cup lightly packed basil leaves
1 tablespoon fresh lemon juice
1 1/4 teaspoon fish sauce
1 garlic clove
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Four 4-ounce thin-cut chicken breasts
For the salad:
2 romaine hearts, chopped
2/3 cup finely shredded parmigiano reggiano cheese
3 vine-ripened tomatoes, cut into wedges
½ small red onion, thinly sliced
