Our Favorite Buffalo Wing Hack

Get your wings extra crispy, no flour required!

The secret to perfectly crispy wings? Boiling water. Yup, you heard that correctly. We're using this unexpected hack to level up game-day wings with no flour required. Toss them in your favorite sauce and enjoy.

Ingredients

  • 2 lbs chicken wings or drumettes

  • 2 cups of boiling water

  • ½ teaspoon kosher salt

  • ¼ teaspoon cracked black pepper

  • ¼ teaspoon cayenne pepper

  • 6 cups of vegetable oil (for frying)

  • ½ stick (4 oz) of melted unsalted butter

  • ½ cup Frank’s Hot sauce

Directions:

Arrange wings on a sheet tray with a wire rack. Boil water in a kettle and slowly pour over the raw chicken until skin tightens up. Allow chicken to cool for 10-15 minutes.

Heat oil in Family Pan to 375 degrees F. Season wings with kosher salt, cayenne and cracked black pepper. In batches, slowly fry the wings 5-7 minutes until golden brown. Remove and dry on a wire rack lined with paper towels. 

Combine melted butter and hot sauce in a stainless steel mixing bowl. Toss wings in sauce to coat. Transfer to plate. Serve with blue cheese or ranch dressing.
