Like the marshmallow treats you loved as a kid...but with popcorn!
If you like a little salty with your sweet, this is the treat for you. This twist on the nostalgic marshmallow bar swaps popcorn for cereal, with cashews for extra crunch. Choose your own adventure and mix in any of our popcorn seasonings for a pop of flavor. The sweet flavors like maple doughnuts and birthday cake work best, but if you want to try to go savory with Parmesan & black pepper...why not go wild?
8 cups popped salted popcorn (store-bought bag or freshly popped)
2 tablespoons unsalted butter, plus more softened butter for greasing the pan
½ teaspoon kosher salt
1 (10-ounce) package mini or plain marshmallows
¾ cup chopped salted cashews
2 teaspoons of Cravings' popcorn seasoning of your choice
Grease a 9x9-inch baking pan with softened butter. Melt the butter over medium-low heat in a large (at least 6-quart) pot, then add the marshmallows and cook, stirring, until melted with no lumps, 4–5 minutes.
OPTIONAL: Add 1 tablespoon of Cravings' popcorn spices—such as birthday cake, chocolate chip cookie dough, blueberry muffin, sweet & a little salty coconut, or maple doughnut—and mix thoroughly into marshmallow base. You can use one flavor or mix and match.
Stir in the salt, then stir in the popcorn and cashews. Turn off the heat. Stir until everything is incorporated.
Carefully transfer the mixture while still warm, then gently and firmly press into the prepared pan.
Refrigerate for 30 minutes, then cut into 9 squares.
