
Smashburger Tacos

Smashburger tacos are blowing up the internet, so we decided to put our spin on the trending dish using our tried and true Enamel Skillet. It starts with seasoned ground beef (as burgers do). Roll into a ball and place into a searing hot pan. Add a flour tortilla on top, smash, using a heavy object (or burger press), then flip. Add cheese and a cover to melt it, and then top with grilled onions and a delicious homemade burger sauce made with ketchup, mayo, mustard and chopped dill pickles. The result? A smashing success (see what we did there?).
Sauce:
1/2 cup mayo
3 tablespoons ketchup, plus more for garnish
2 tablespoons chopped dill pickles
1 tablespoon yellow mustard
1 teaspoon sugar
½ teaspoon chili flakes
Burgers:
2 tablespoons vegetable oil
1 medium white onion, finely diced
1 pound 80/20 ground beef
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
4 4-inch flour tortillas (fajita-sized tortillas)
4 thin slices cheddar cheese (or American if preferred)
1 cup shredded iceberg lettuce
2 small vine-ripened tomatoes, diced
