'Tis the season for a hearty holiday dinner, and this is one of our faves! It’s our take on a roasted Korean short rib but enhanced with the delicious flavor of POM Wonderful 100% Pomegranate Juice and POM Pomegranate Fresh Arils. You start off by glazing the ribs and baking them in the oven, then right at the end a final glaze that includes POM Juice, which adds a sweet yet tart flavor, complemented by the fresh carrot salad with POM Arils for a ruby red pop of color. You’ll find yourself making this over and over again this winter!
2 ½ lbs Korean beef short ribs
4 tablespoons gochujang
⅔ cup light brown sugar
4 tablespoons low-sodium soy sauce
1 teaspoon Kosher salt
1 tablespoon white vinegar
8 ounces POM Wonderful 100% Pomegranate Juice
Carrot Slaw
2 grapefruits
4 ounces POM Pomegranate Fresh Arils
3 large carrots, julienned
1 tablespoon chopped Italian parsley
Slaw Dressing:
2 T olive oil
1 T honey
½ teaspoon dijon mustard
½ teaspoon kosher salt
¼ teaspoon black pepper
