Cool down with a triple threat of refreshing: mint, ginger, and a popsicle of your choice.
This is the cocktail for those days when no amount of air conditioning, fans, or removing every layer of clothing can cool you down. The combo of classic mint and ginger in this single-serving cocktail makes for an ultra-refreshing party for one, complete with dessert inside—any popsicle flavor you like. (Go for minis so your glass doesn't overflow!) If you don't drink alcohol, this would work really well with lemonade, iced tea, or a new twist on an Arnold Palmer.
1 (1-inch) piece ginger, peeled and cut into matchsticks
3 sprigs mint, plus more for garnish
1 large lime, cut into wedges
2 ounces white rum
½ cup ice
1 popsicle (try lime, watermelon, mango, or pineapple)
Combine the sugar, water, and ginger in a small glass bowl—leave a couple inches of room at the top so it doesn’t overflow—and microwave until dissolved and bubbling, 45 seconds. Set aside and let cool slightly, 2 minutes.
Juice the lime into a rocks or double old-fashioned glass (about 8 ounces) and add the mint sprigs. Muddle with a cocktail muddler, the handle of a wooden spoon, or anything that works, then add the simple syrup, the rum, and stir thoroughly.
Add ice, a popsicle of your choice, stir, and then garnish with mint.
