Fried Mashed Potato and Veggie Sandwiches

Like a veggie burger, but better!

About two days post Thanksgiving, we’re usually all tuckered out on turkey. But what to do with all those other leftovers? The pile of mashed potatoes, the crudite plate, the salad lettuce you didn’t use…this recipe utilizes all the leftover veggies to make delicious mashed potato patties that are spiced up with a swipe of sriracha mayo. It even uses up all those leftover dinner rolls! Genius.

For the mayo:

    tablespoons mayonnaise

    tablespoons sriracha

    tablespoon lemon juice

    teaspoon Dijon mustard

For the patties:

    cup vegetable oil, plus more for oiling your hands and frying the patties

    teaspoon kosher salt, plus more for seasoning

    teaspoon freshly ground black pepper, plus more to taste
