Cheesy Garlic Bread Challah Twist

Challah:
3/4 cup warm water (110° to 115°F)
1/2 cup plus 2 tablespoons sugar
Two 1/4-ounce packets active dry yeast
1/2 cup vegetable oil, plus more for greasing the bowl
1/8 teaspoon ground turmeric (optiona)
3 eggs
6 cups all‑purpose flour, plus more as needed
2 1/2 teaspoons (14 grams) fine sea salt
Filling/Topping:
3 cups shredded mozzarella
2 cups shredded parm
1/2 cup chopped parsley
2 tablespoons minced garlic
3/4 teaspoon kosher salt
1/4 teaspoon coarsely ground black pepper
1/4 teaspoon chili flakes
1/2 stick butter, melted, plus more for brushing
Supermarket-style parm (from a can!) for sprinkling
