Animal-Style Inspired Fries

It's no secret that Chrissy loves her fast food, and In-N-Out Burger is high up on the list of her all-time faves. Inspired by one of their favorite "secret" fast-food dishes, this sheet-pan version of French fries will satisfy your craving without having to leave the house. These "loaded" fries are baked to a crisp on our Cravings sheet pan and then topped with caramelized onions, "animal" inspired sauce made with ketchup, mayo, hot sauce and mustard, and cheese, obviously.
3 tablespoons vegetable oil
1 jumbo white onion, diced small
one pound package frozen shoestring French fries
1/2 cup mayo
2 1/2 tablespoons cup ketchup
2 tablespoons hot sauce of your choice, such as sriracha
1 teaspoon yellow mustard
1 ½ teaspoons white wine or cider vinegar
3 tablespoons sweet pickle relish
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
4-5 slices American cheese, halved
3 tablespoons chopped parsley
