When you want a salad with substance (always), start with greens and add your favorite roasted veggies, beans, and avocados for healthy fat.
- Slice veggies and toss with olive oil. Roast at 400° for 25-30 minutes. Let cool.
- Combine ¼ cup oil with ¼ cup lime juice, ½ tsp. each cumin and salt, one minced garlic clove, and ¼ teaspoon pepper in a large bowl and whisk until incorporated.
- Combine cooled veggies with one can black, cannellini, or rinsed kidney beans and one diced avocado. Add to a large serving bowl filled with salad greens and herbs, add dressing, mix and serve.
