You might remember this breading from the original Cravings. A spicy, tangy blend of grated parmesan and toasty panko crumbs…oh baby. If you can find some firm green tomatoes (an unripe red tomato, not a green heirloom tomato!) in your neck of the woods, these guys make theeeeee perfect snack. Honestly I have yet to try a fried or baked green tomato where the breading sticks and crisps quite as well as this.
The sauce is…I don’t have a name for it. It’s a beautiful hybrid of some sort of BBQ ranch and the horseradishy bloomin’ onion dip.
Chrissy’s BBQeautiful sauce.
Ingredients
- 1 ¼ cups all-purpose flour
- ½ teaspoon cayenne pepper
- 2 teaspoons kosher salt, plus more for seasoning
- ½ teaspoon freshly ground black pepper, plus more for seasoning
- 3 eggs
- 1 cup panko (Japanese-style) breadcrumbs
- 1 ¼ cup finely grated parmesan cheese (I like to use my Microplane)
- 3 tablespoons olive oil
- Garlic salt, for seasoning
- 1 pound green tomatoes, cut into ¼-inch-thick slices
- ¾ cup mayonnaise
- ½ cup sour cream
- ½ cup buttermilk, shaken
- 2 teaspoons prepared horseradish, slightly drained
- 1 tablespoon Old Bay seasoning
- 10 dashes hot sauce (I use Louisiana!)
Directions
Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment and set aside.
Line up 3 shallow bowls. In the first bowl, whisk the flour, cayenne, salt, and pepper.
In the second bowl, whisk the eggs with a pinch of salt and pepper.
In the third bowl, stir together the panko, parm, and olive oil with a fork until the bread crumbs are coated in the oil.
One at a time, coat the tomato slices in the flour and shake off the excess, then dip into the egg, allowing the excess to drip back into the bowl. Dip in the panko mix, pressing the breading on all sides to coat generously.
Arrange the breaded tomatoes, evenly spaced, on the reserved baking sheet and bake until golden brown and crisp, 14 to 15 minutes.
While the tomatoes are baking, make the BBQeautiful Sauce by whisking the mayo, sour cream, buttermilk, horseradish, Old Bay, and hot sauce in a medium bowl.
Remove the tomatoes from the oven and dust with garlic salt and pepper right away; cool slightly, or they will completely roast your tongue off. (Trust me – I couldn’t wait.)
Serve with BBQeautiful Sauce (extra sauce will last in the fridge for about a week). Enjoy!!
Omg these were delish! I love fried green tomatoes, and these were super crispy and flavorful without the frying – game changer! And the breading actually stayed on the tomatoes – woo hoo! I think *maybe* they could stay in the oven a touch longer, but that is all about how you like the tomato consistency, and if your oven is the devil and lies to you about it’s actual temperature (which mine often does). And that sauce…. swoon!
