If there’s one thing I don’t believe in, it’s “New Year, New You!” You should eat whatever makes you happy and whenever you want it, regardless of the time of year. This smoothie recipe is light—and shockingly vegan—yet still incredibly satisfying, filling, and delicious. It’s lassi-ish with mango and yogurt (I use almond, coconut, or oat, but you could make this with regular dairy, too) and avocado for extra creaminess. I love it for breakfast, as a midday pick-me-up, or when I’m feeling like I need something healthy in my life. It also doubles or even quadruples easily if you have a larger blender and want to make for other people.
Ingredients
- 1 cup cubed frozen mango
- ½ cup dairy-free vanilla yogurt
- ½ cup dairy-free milk (such as almond, coconut, or oat)
- ¼ small ripe avocado
- 1 tablespoon honey, or more to taste
- Pinch kosher salt
- Pinch ground turmeric
- Tiny splash vanilla (optional)
Directions
Blend everything together in a bullet-style or other blender until smooth but still thick, 20-30 seconds. Pour into a glass and serve immediately.
