Sheet pan meals are one of life’s simplest pleasures. Everything cooks at the same time, at the same temperature – it’s a delight. This salmon comes out perfectly tender and the asparagus gets nice and juicy, all thanks to the GENEROUS amount of garlicky butter that is slathered across everything. Feel free to add some extras to your compound butter. Maybe some chili flakes, or a little dijon? You will make this every week, trust me!!
- 2 lemons
- 1 stick unsalted butter, softened (but not melted!)
- 2 tablespoons minced garlic
- 1 tablespoon dried parsley (it can also be fresh, but I honestly like the lighter flavor in the dried)
- 1 teaspoon kosher salt, plus more for seaso
- 4 skin-on, center-cut salmon fillets (about 1 ¾ to 2 pounds)
- 1 bunch asparagus
- Olive oil
- Freshly ground black pepper, for seasoning
Preheat the oven to 450°F.
Zest one of the lemons into a medium bowl (reserve the lemon), then add the softened butter, garlic, parsley, and salt. Mix it up realllll good and set aside.
Cut or snap off the whiter ends off the asparagus. They’re kind of tough. Toss them or feed them to your hamster. Halve both the reserved zested lemon and the second lemon.
Line a large rimmed baking sheet with foil (or parchment paper, whatever)
Generously drizzle some olive oil onto the foil. Arrange the salmon, halved lemons, and asparagus so it’s nice and purdy.
Now it’s butter time! Go crazy.
Told you. Use it ALL. Smear most of it on the salmon, but also dot some on the asparagus.

Sprinkle a little salt and pepper on top.
Pop into the oven for 12-14 minutes or so, depending on how you like your salmon. I like mine slightly underdone and pink in the middle. Don’t be scared of undercooking it – people eat this stuff raw (people like me) – overcooked salmon is atrocious. So 11-12 minutes for Chrissy Style, 14 minutes for I-don’t-recommend-style.
Tilt your pan and spoon more of that melty butter goodness onto your filets. Season with more salt and pepper if you want. Squeeze the roasted lemon juice all over the top.
