Take yourself to Thaitown with these heavenly deviled eggs.

These genius-if-I-do-say-so-myself snacks have all the flavor of mom's classic tom yum soup but in the form of deviled eggies. Use a powder or paste you can get in Thai Town (or on Amazon town), and top with chicharrones or other pork rinds for crunch.

  • 12 hard boiled eggs

  • ½ cup mayonnaise

  • 2 tablespoons finely minced shallot

  • 1 tablespoon fish sauce

  • 2 teaspoons rice vinegar

  • 1 ½ teaspoons tom yum powder or paste

  • 1 small bag chicharrones (you will have extra, so snack away)

  • 1 lime

  • Pinch of kosher salt
