Turns out that when the main ingredient in this smoky soup are dried and peeled, they naturally split in half.   • 4 slices thick-cut bacon, roughly chopped

  • 3 large carrots, diced

  • 3 stalks of celery, diced

  • 1 medium onion, diced

  • 2 tablespoons minced garlic

  • 1 cup dry white wine

  • 6 cups chicken stock, plus 1 cup more if needed

  • 2 teaspoons kosher salt, plus more for seasoning
