Question: What is the point of pounding chicken before you cook it? And is it necessary? It feels like extra steps.

Great question! Pounding a skinless boneless chicken makes it cook more evenly, since you can pound out the thicker side to match the thinner side. Also, the time you spend pounding takes away from the cooking time, so you may find it all evens out in the end! Definitely not necessary, but add 1-2 minutes cooking time if you don’t pound.
