Question: Thoughts on the green center in garlic? My Nana always called it ‘the germ’ and told me to always remove it. But many chefs on cooking shows always leave it and ignore it. Not sure if it’s just an old wives-tail to remove it.

There’s nothing unhealthy about eating it – some people just think it means the garlic is old. In times like this, garlic is garlic and if the clove seems fine, I say throw it in, green center and all.
