Question: It seems your ‘go-to’ salt, is Kosher. I typically use Himalayan as my daily salt. I do have Kosher on hand. Is kosher better for certain recipes or does it matter if I substitute?

Totally a matter of preference! I like Diamond kosher salt for its balanced flavor and coarser grains, but Himalayan is wonderful, too!
