Question: I made the Pineapple short ribs from your cookbook (paired with the coconut rice) and it was OMG yum. I was able to cook nearly the whole meal while carrying a sick one year old who didn’t want to be put down, which was a huge plus in my mommy book. I wanted to make a double batch of the marinade next time and turn half of it into a sauce to put on everything. Any suggestions on how to turn the marinade into a sauce?

I love that sauce, too! You could strain out the onion and pineapple chunks (or blend the entire thing up) and simmer on low for a while until it reduces and gets nice and sweet!
