Question: Do you think a sharp cheddar would work instead of parmesan in the spicy miso carbonara recipe? Thanks! xx

It would! It might make the pasta a little stickier – cheddar is more gluey than parm! If you do use cheddar, try to finely shred it so it melts into the pasta like the parm does.
