Here is the pesto from Cravings 2: Pulse 2 cups fresh basil leaves, 1 cup freshly grated Parmigiano- Reggiano cheese, 1⁄3 cup pine nuts and 3 smashed garlic cloves in a food processor. Turn the processor on and add ½ cup olive oil in a slow, steady stream until a paste forms, about 15 seconds. Scrape down the sides of the processor and season with salt and pepper to taste. You could use walnuts, pecans, hazelnuts, or pepitas (pumpkin seeds) instead of the pine nuts; vegetable oil instead of the olive, and pecorino instead of the parm.
