Josef Centeno

Josef Centeno, author and chef-owner of Amá in Los Angeles, grew up in a Mexican-American family in San Antonio, Texas. His inspiration comes from his grandmother's Tex-Mex cooking and regional Mexican cuisine, and is infused with influences from the American South, Germany, Poland, and Morocco.
